Chilly Morning Breakfast Winner


Continuing the autumnal vibes and the need for something warming in the morning I’ve come up with this delicious, nutritious breakfast combo! Heavenly, creamy coconut porridge with spiced stewed plums.

You may be thinking ‘but I don’t have time to stand over the hob and stew fruit in the morning!!’ but guys, I promise you, this takes no more than 10 minutes! Your plums can be blipping away on the hob whilst you crack on with your porridge base and making a cuppa; all will come together in perfect harmony.

Plus, you can stew a big batch of plums at the start of the week (or even at the weekend when time isn’t so precious) and keep them in the fridge for ease over the next few days. These plums would also work brilliantly served with Greek yogurt in place of the porridge for a lighter breakfast, a snack or even a healthy dessert!

Coconut Porridge with Quick-Stewed Autumn Spiced Plums
Serves 1

For the plums
2 plums, each sliced into 8 wedges
½ tsp ground cinnamon
½ tsp ground mixed spice
½ tsp pure runny honey
50g instant oats
1 tsp chia seeds
1 tsp flaxseeds
5-10g creamed coconut, grated
½ courgette, finely grated (optional)
200-250ml water
Splash of milk
Flaked almonds, toasted, for sprinkling on top to finish
  1. Add the plums to a small saucepan with a splash of water; simmer on a low-medium heat for 8 minutes or so, stirring occasionally and adding a touch more water if needed
  2. After the 8 minutes, add the spices and honey and gently stir to mix through. Turn down the heat to low
  3. In the meantime, combine the oats, seeds, grated creamed coconut and courgette (if using) in a bowl and add 200-250ml water depending on how thick you like your porridge; microwave for 2-3minutes stirring halfway through
  4. Once your oats are cooked stir through a splash of milk for extra creaminess, top with the stewed plums and sprinkle over some toasted almonds for a little crunch
