A Sweet Treat - Festive Almond Biscuits

These make a perfect edible gift or little treat to serve with coffee when you’ve got the family coming over as is often the case of the festive period.

Quick to make and with just five ingredients they’re nutty, chewy and unpretencious but a firm favourite here.

Festive Almond Biscuits

300g ground almonds
300g icing sugar
2 tsp runny honey
3 egg whites
Flaked almonds to top
  1. Sift the icing sugar into a large bowl; add the ground almonds and stir to combine
  2. Add in the honey and egg whites then mix to form a soft, slightly sticky dough
  3. Wrap in clingfilm and refrigerate for at least 30 minutes*
  4. When ready to bake, preheat the oven to 150C and line a tray with greaseproof paper
  5. Dampen your hands and pull off small amounts of dough, roll into balls and place on the tray; flatten slightly and push a few flaked almonds into the top of each
  6. Bake for 12-15 minutes until lightly golden – a good test is that they come free from the paper when you wrap the tray on a surface
* The dough can be made and chilled for up to 3 days before baking!
